Shelf life is defined as the length of the time a product may be stored without becoming unsuitable for use or consumption. Shelf life depends on the degradation mechanism of the specific product. Most can be influenced by several factors: exposure to light, heat, and moisture; transmission of gases; mechanical stresses and contamination by things such as microorganisms.
There are two type of shelf life assessment methods; direct method (real time) and Indirect method (Accelerated). Direct method (real time) is store under selected conditions for longer than the expected shelf life and check at regular intervals to see when spoilage begin. Of course, long shelf-life studies do not fit with the speed requirement and therefore accelerated studies have been developed as part of innovation.
By increasing the storage temperature, the trial period is shortened, and rate of deterioration is increased. accelerated shelf-life testing is useful for several other purposes, e.g. to determine product safety under improper storage conditions, for troubleshooting in the initial stages of product development and for assessing the suitability of product packaging.
